Romanian Cheese Cake

- 500 g cheese cream (I used 400 g of ricotta cheese and 100 g of Greek yogurt)
- 100 g sugar
- 2 eggs
- 2 tablespoons of full fat cream (35%)
- 200 g raisins/sultanas
- zest of an organic orange/lemon
- 2 sheets of filo pastry

Warm up the oven at 190C (up and down)

Mix well the cheese cream with the sugar

Add the eggs one by one, the full fat cream, the raisins and finally the orange/lemon zest

Mix well until you get a light cream texture

Cover the tin mold with parchment paper and place one of the filo pastry sheet on the bottom of the mold

Pour in the cream mix and cover it with the second filo sheet

Sprinkle with some sugar dust

Bake the cake for 45 minutes

Leave to cool down before serving
