Banana and Walnut Cake

- 200 g spelt (or any other) flour
- 100 g raisins
- 1.5 teaspoon ground cinnamon
- 0.5 teaspoon ground nutmeg (optional)
- 2 teaspoon baking powder
- 0.5 teaspoon soda bicarbonate
- 120 ml sunflower oil (it is a neutral one. You can use olive oil, but that may come with an intense flavour)
- 150 ml agave syrup
- 2 large eggs
- 2 medium bananas
- 50 g walnuts (plus 4-5 halves for decoration)
Instructions
Preheat your oven to 180C and cover a loaf tin with a parchment paper
Put the raisins into a small pan, covr with water and bring to a boil. Turn off the heat and set asde
Sift the flour, cinnamon, nutmeg, baking powder and soda bicarbonate in a large bowl and mix together
In a jug mix the sunflower oil, agave syrup and eggs until combined
Mash the bananas and blitz them with the liquid ingredients from above
Pour the wet ingredients from the jug into the bowl of dry ingredients and mix until smooth
Drain the raisins and stirr in along the crushed walnuts
Pour the mixture into the tin covered with parchment paper,decorate the top with the walnut halves
Bake for 45-50 minutes or until a knife blade or a toothpick comes out nearly clean
Leave to cool 10-15 minutes, then turn out into the wire rack to cool
