The cobbler is a wonderful cake with a batter covering a layer of baked fruit. I have tried it first time as I had to stay away from the traditional flour based bakes. Buckwheat is a pseudo-cereal, gluten-free and rich in minerals.
Apple Cobbler Cake

- 6 apples
- 70 gr of brown sugar
- 1/2 tea spoon of ground cinnamon

- For the batter:
- 80 gr of peeled almonds
- 100 gr of buckwheat flakes
- 60 gr of brown sugar
- a pinch of salt
- two pinches of vanilla
- 1/2 tea spoon of ground ginger powder
- 80 gr white almond cream
- 150 ml of almond milk
Instructions
Preheat the oven at 180 degrees C
Cut the apples in small pieces and place them on a baking tray
Mix the apple bits with the sugar and the cinnamon
Bake the apple for 20 minutes, mixing them at half way of the time, so the apple will be evenly baked
Grind the almonds in a food processor or coffee grinder
Add the buckwheat flakes and grind them together into a fine flour
Mix it with the sugar, the salt and the spices
Add now the almond cream, the milk and mix everything well until you get a batter
Take out the tray with the apple bits and cover them with the batter adding it with a spoon without spreading it
Turn back the tray in the oven and bake for 25 more minutes
Serve it warm
Notes
First time I did this cake I mixed the roasted apple bits with the batter, but the reusult was yummy as well!
