Sweet Potato Hummus

- 1 sweet potato
- 400 g of chickpeas (from jar/can)
- a large spoon of tahini paste (sesame paste)
- two table spoons of olive oil
- the juice of half a lemon
- half of a tea spoon of cinnamon
- salt & pepper
Instructions

Preheat the oven at 200C (grill up & down)

Cut the sweet potato into equal size cubes and place on a tray covered with baking paper

Drizzle with some olive oil and bake the potato for 20 minutes

Drain the chickpeas and add them to the food processor or to a deep bowl

Add the baked sweet potato, the 2 spoons of olive oli, the lemon juice, the cinnamon, salt & pepper

Whiz for 2 minutes until you get a a homogeneous paste

Your hummus is ready to enjoy by dipping in vegetable sticks, or spreading it on warm pitas/toasted bread
