Today I have visited a beautiful market in Transylvania, in Romania where I have spotted a super-food that I could not miss: sauerkraut or fermented cabbage. It is a common presence in Europe from Germany throughout Central Europe and Russia. Sauerkraut is an anti-inflammatory food rich in probiotics, antioxidants and fiber as well as vitamin K, vitamin C, calcium, potassium and phosphorus. This super food is one of the best friend of your tummy as it is helping with your digestion and the absorption of vitamins.
Once back in the kitchen I came up with an ingenious and healthy winter salad. Place 2 tablespoons of sauerkraut in a bowl, 2 slices of pomelo broken in pieces, a handful of walnuts, some feta like fresh “telemea” cheese, a table spoon of olive oil and few black grapes and some sunflower seeds. Mix well. You don’t need to add salt as the fermented cabbage is high in sodium. The salad bursts in different textures and flavours that will make your winter healthy eating a memorable experience.
