“Catalán Castellet” (or “Human Castles”) are part of the Catalan tradition where people create human towers with the aim of building the tallest structure. It symbolizes the spirit of the Catalan people of a community based, strong and solid union. This name inspired me when I took the photo of today’s dish: a vegetable tower with sweet roasted bell peppers, onion and beetroot sticks sprinkled with protein rich hemp seeds. Bon profit!
