Pink Porridge with Precious Pomegranate Pearls

I love using 100% of my ingredients in the kitchen. After juicing the carrots and beetroot I keep the fiber and add it to different plates such as salads, soups or in this case the morning oats porridge. The carrot and beetroot will give your porridge a pleasing pinkish colour that will make a nice background for your toppings. Give it a try and start playing!

Pink Porridge

Serves: 1 Cooking Time: 3 mins

Ingredients

  • half a cup of oats
  • a cup full of your favourite vegetal milk (I used coconut milk)
  • 2 tablespoons of fiber from carrots and beetroot that I juiced
  • a handful of walnuts
  • a teaspoon of flower pollen
  • a handful of pomegranate seeds
  • a teaspoon of acacia honey

Instructions

Put in a pot the oats, the vedge fiber (carrot & beetroot), the walnuts, the milk and place it over a medium heat

Stir occasionally

In 2 minutes the porridge will come together

If you want it less fluid continue keeping it on the heat one more minute

Serve in bowls and sprinkle the pollen, the pomegranate seeds and the honey
