Healthy Blueberry & Fig Cookies

- 300 gr spelt flour
- 6 gr baking powder
- 40 gr coconut/brown sugar
- a cup of blueberries
- 2 fresh figs (optional)
- 100 ml full fat coconut milk from a tin (plus a spoonful for brushing the cookies before baking)
- 6 halves of walnut / almond flakes
Instructions
Turn on the oven on +180C
In a large bowl mix the flour, the baking powder, the sugar
Add the blueberries and the chopped fresh figs
Make a little well in the middle and start adding the coconut milk
You can use your fingers to incorporate the ingredients into a batter
Dust the working table with some flour and place the batter, stretching it into a 1 cm thick sheet
Cut out round shapes of batter with the help of a jar or cup and place the cookies on a baking tray covered with baking paper
Decorate your cookies with a walnut half or with few almond flakes
Paint the cookies with the remaining coconut milk using a brush
Place the tray in the oven and bake the cookies for 30-35 minutes
Leave the cookies to cool down
