Spanish Habas Beans Curry

- 750 g frozen Spanish Habas / green beans
- 1 onion
- 2 tomatos
- 5 cloves of garlic
- 3 tablespoons of olive oil
- 1 tablespoon of mustard seeds
- 1 teaspoon of ground turmeric
- 1 teaspoon of green curry paste or 2.5 teaspoons of curry powder
- 1.5 teaspoon of salt
- juice of half a lemon
Instructions
Take out the beans from the freezer and leave them to thaw at room temperature while you prepare the ingredients
Peel and chop the onion
Chop the tomato
Peel and crush the garlic
Put the oil in a tall pan/pot over a high flame
When hot, reduce the heat to medium and add the onion and the tomato
Cover with the lid on and cook for 5 mins, stirring occasionally
Add the garlic and mustard seeds and cook for another 5 mins with the lid on
Add the turmeric and curry powder/paste and stir well, cooking for 2 more mins
Add the beans and the salt and stir well
Add water to cover a finger at the bottom of the pan and leave to simmer covered on a low heat for 20-45 mins
Squeeze the lemon juice and serve!
