This simple snacking idea is packed with protein, fiber, healthy oils and above all it takes less than 10 minutes to prepare and clean the dishes! It makes an ideal serving for a lazy Sunday breakfast or brunch.
Protein Packed Kale Omelette

- 2 eggs
- a handful of kale leaves
- 1 tablespoon of olive oil
- pinch of salt, pepper & chili flakes
- pinch of black and golden sesame seeds
Instructions

Add a tablespoon of olive oil to a frying pan

Throw in the kale leaves cut in stripes and cook for 2-3 minutes

Beat the 2 eggs in a small bowl and add them to the pan
4
Take a fresh slice of spelt/wholegrain bread and sprinkle some of your favourite olive oil
5
Put the omelette over the bread

Season with salt, pepper, chili flakes and sesame seeds
