Lovely Greens With Sweet Tahini

- head of a broccoli
- 120 g of green (French) beans trimmed (without their end tips)
- 180 g peas (mange tout) trimmed
- 1 tablespoon olive oil
- 20 g coriander leaves
- 2 1/2 tablespoon black and white sesame seeds, toasted
- 1 teaspoon nigella seeds
- Sauce
- 50 g tahini paste
- 1 small garlic clove, crushed
- 1/2 teaspoon tamari soy sauce
- 1/2 tablespoon honey
- 1 tablespoon cider vinegar
- salt
Instructions
Let's start with the sauce. Whisk all the ingredients for the sauce in a bowl with 1/2 teaspoon of salt and 2 tablespoons of water until you get a honey-like consistency. You can fix it by adding extra water or tahini if needed
Remove the florettes of the broccoli and cut them in two on vertical
Boil the water in a medium size pot (don't add any salt)
Blanch the beans al-dente for 4 minutes
Lift the vegetables out of the water with a slotted spoon and transfer them to a colander and run them under plenty of cold water
In the same water boil the peas for 2 minutes, remove them and refresh them under cold water
Repeat with the broccoli, cooking it for 2-3 minutes
Once the vegetables are cooked and dry, mix them in a bowl with the olive oil
Add most of the coriander and the seeds and mix well
Pour the sauce on top with the remaining coriander and seeds
