Last weekend I have been hiking in the Montsant mountains in southern Catalonia when, close to a fresh water spring I sensed the beautiful smell of elderflower. I picked two handful of flowers and let them for a couple of days perfume the interior of my home before I started to prepare this infused drink called elderflower cordial. It is an old fashion fizz drink known from the British Isles til the eastern parts of Europe. This drink was known also during the Roman Empire. It is an easy but very pleasant home-made drink, just like the lemonade that allows you take life slower and enjoy the flavours of late spring, beginning of the summer time.
Elderflower Cordial

- 100 g of fresh/dried elderflower
- 2 lemons
- 500 g of (coconut) sugar/honey
- 4.5 l of filtered water
Instructions
Place the elderflower into a 5 liter glass jar
Slide a lemon and add it to the jar
Squeeze the juice of the second lemon into the jar
Add the sugar/honey
Add the water
Cover the top of the jar with a light textile and fix it with an elastic band
Leave the jar in a sunny place so the fermentation may begin
Stir well twice a day (morning & evenings) with a wooden spoon
After 4 days filter the liquid and pour it into glass bottles and store in the fridge
The drink will continue to ferment at a slower pace. That's why it is good to consume it in the next couple of days
