Egg Clouds

- 4 eggs
- a pinch of salt & pepper
- a small knob of finelly grated parmiggiano reggiano cheese (or any hard cheese)
- 1/2 teaspoon of chilli flakes
Instructions
Set the oven at 170C
Separate the albumen (the white part) of the egg from the yolk (the yellow part). The white part can go to a tall bowl and the yolks in smaller cups in order to keep them whole and separated
Beat up the white part of the eggs together with a pinch of salt and pepper until you get a firmly foam
Line a baking tray with baking parchment/paper
Split the foam into 4 batches in a shape of a cloud on the baking tray, making a little well in the middle of each "cloud"
Sprinkle a pinch of chilli flakes and a pinch of the finelly grated cheese over the "clouds"
Bake the "clouds" in the oven for 10 minutes at 170C
Remove the tray from the oven and gently place a yolk into the middle of each "cloud"
Return the tray to the oven and let it 4 more minutes
Serve and enjoy!
