Spinach, Tomato, Beetroot & Carrot Salad

 

For a higher fiber intake you can consider this simple salad that looks colorful, crunchy and juicy at the same time and that takes a couple of minutes to fix. Grind in the food processor half a peeled beetroot, a carrot and a white radish. Give them just a few wheeze as you want them still crunchy. Throw them in a bowl with a handful of fresh spinach, a sliced large tomato, one table spoon of olive oil, salt and pepper.
