Cold Raw Avocado Cake

Ingredients

  • For the base:
  • 300 g of walnuts
  • 100 g pitted dates
  • 2 tablespoons of cacao powder
  • 2 tablespoons of melted coconut oil
  • For the topping:
  • zest of 1 organic lime
  • zest and juice of 2 organic lemons
  • 3 ripe avocados
  • a pinch of salt
  • 9 tablespoons of honey
  • 12 tablespoons of melted coconut oil

Instructions

Take a round shaped cake tin and cover its base with baking paper

Whiz the walnuts in the food processor until they are like crumble

Add the dates and the cacao powder and whiz

Now add the coconut oil and make sure that all ingredients are blended together

Put the mix in the cake tin and compact it with a spoon/spatula

Now we start to make the topping mousse by zesting the lime and lemons into the clean food processor

Add the lemon juice and the lime juice too, then the avocado meat, the salt, honey, coconut oil and whiz

Spread the topping over the base in the round shape cake tin

Put the mousse cake in the fridge for at least 2 hours

I enjoy freezing the cake and serve it as a frozen ice-cream
