

Raw Pappardelle Courgette with Roasted Walnuts and Pomegranates

- 2 courgettes
 - 1.5 tablespoon of tahini (sesame paste)
 - 1 tablespoon of pomegranate molasses
 - 1 teaspoon honey
 - 1 pomegranate
 - 100 g walnuts

									Start peeling the courgettes into long pasta-like ribbons

									Mix the tahini, pomegranate molasses and the honey in a cup and pour over the courgette Pappardelle. You can mix it with your hands making sure that the courgettes are now nicely coated with the paste

									Kick off the pomegranate seeds with a wooden spoon from the halved fruit

									Toast the walnuts and crush them with a knife

		Mix the pomegranate seeds and the walnuts with the coated courgettes
