Healthy Raw Lemon Bars

- 100 g almonds
- zest and juice of a lemon
- 140 g of grated coconut
- 50 g of sunflower seeds (soaked in water for 3 hours)
- 1 teaspoon of grinded cardamon
- 1/4 teaspoon of vanilla powder
- 10 pitted dates
- 1 tablespoon of tahini
- a pinch of salt

Rinse the sunflower seeds under running water

In a food processor grind them together with the almonds, the lemon zest , the coconut, the cardamon, vanilla powder and the salt. Set aside the mix.

In the food processor add the dates, the lemon juiceand the tahini

Now you can mix the two parts

Place the final product in a rectangle shape, thick of at least 2 cm

Cut the bars in the desired size and store them in an air-tight container in the fridge
