Healthy Banana Bread

- 300 gr of ripe bananas
- 200 ml of almond milk
- 120 gr of fine corn flour
- 40 gr of coconut flour
- 60 gr of quinoa flakes (I used oats flakes)
- 70 gr of brown/muscovado sugar
- 1 table spoon of psyllium
- 2 tea spoons of gluten free nutritional yeast
- 1/2 tea spoon of soda bicarbonate
- a pinch of salt
- 2 pinches of natural vanilla extract (powder)
- 1/2 tea spoon of ginger (powder)
- Optional ingredients: grounded almonds/walnuts, dark chocolate drops, spices or matcha tea, rom and candid ginger

Preheat the oven at 200C

Mix the banana with the almond milk

In a large bowl mix all the dry ingredients (the rest of the ingredients)

Add the banana-almond milk mix to the dry ingredients and mix until you will get a homogenous mixture

Take a cake tin form and cover it in baking paper

Pour the batter into the form . You can sprinkle some sugar crystals on top or decorate with walnuts halves

Bake for 10 minutes then reduce the heat to 170C and bake 30 more minutes

The cake is ready when you will insert a knife and the blade will come out dry

Leave the banana bread to cool down in the half opened oven

Keep it wrapped in a tablecloth in the fridge for max 3 days.
