‘Cardinal Red’ Soup Creme

A natural, healthy and nutritious soup that looks like the velvety cape of a cardinal or stolen from a vampire film? Yes, it is possible. As you can see in the pics bellow, the beetroot will give it a beautiful intense Cardinal Red colour. Just don’t blame it on my Transylvanian origins 🙂

'Cardinal Red' Soup Creme

Serves: 2 Cooking Time: 20 minutes


  • a small beetroot
  • a carrot
  • an onion
  • a slice of garden pumpkin
  • 2-3 fingers of water in a pot
  • pinch of salt



Chop the following ingredients into cubes: the beetroot, the carrot, the onion, the pumpkin


Put 2-3 fingers of water to boil in a pot


When the water is boiling add the vegetable cubes, a pinch of salt and cover with a lid


Leave to cook 14 minutes on a medium fire


When time is up mash the content with a hand mixer
