Autumn Pumpkin & Walnut Cake

Ingredients

  • 2 eggs
  • 1/2 cup of baked pumpkin pulp
  • 1/2 cup of agave syrup
  • 2 tablespoons of melted coconut oil
  • 1.5 cups of almond flour/meal
  • 1/4 teaspoon salt
  • 1/4 teaspoon of baking powder
  • 1/4 teaspoon of soda bicarbonate
  • 2 teaspoons of sweet winter spice mix (cardamom, cinnamon and ginger)
  • 1/4 cup of crushed walnuts/dried fruits such as cramberries/sultanas
  • 2 tablespoons of grated coconut

Instructions

Preheat the oven at +180C

Beat up the two eggs for 1 to 2 minutes

Add the pumpkin flesh, the syrup and coconut oil and blend well together

Combine separately the almond flour, the salt, soda bicarbonate, the baking powder and the spices in a bowl

Now mix the dry and wet ingredients and at the end add the walnuts/dried fruit

Pour the mix into a baking tin covered in baking parchment

Bake for 25 minutes or until an inserted blade of a knife/a toothpick comes out dry

Let the cake cool off before serving
