


Mujaddara

- 1 cup basmati rice (rinsed)
- 4.5 cups water
- 1/2 cup olive oil
- 2 large onions thinly sliced
- 2 cups brown lentils (rinsed and drained)
- 1 teaspoon salt
- 2 teaspoons cumin (tosted and grinded)

- yogurt (optional)
Instructions

Wash the rice 3-4 times under cold water. Cover the rice with water and reserve

Heat the oil in a large pot over high heat

Add the onions and cook, stir until brown (about 20 min). When done, separate the onion and reserve the oil.

Add the lentils to another pot. Add water. Stir to combine.

Bring to boil. Reduce the heat to medium low annd cover with a lid. Cook 15 minutes

Drain the soaked rice, rinse and transfer to the pot with lentils. Add the salt and stir once. Cover with lid and cook 15 minutes

Remove the pot from the heat. Rest covered 5 min. Add the cumin and fluf the rice and lentils with a fork

Pour the oil on top. Spoon the crispy onion on top.

Serve warm with yogurt sauce
