Raw Pumpkin & Apple Soup

Ingredients

  • 400 g of pumpkin
  • a table spoon of salt
  • 200 g of apple
  • zest of a lemon (if organic)
  • 50 ml of lemon juice
  • a table spoon of olive oil
  • a pinch of pepper
  • a pinch of chili flakes
  • a tea spoon of ground turmeric
  • 500 g water
  • pumpkin & chia seeds for decoration

Instructions

Cut the pumpkin into cubes

Sprinkle the pumpkin cubes with the salt and leave for one hour

Rinse the pumpkin

Add it together with the rest of the ingredients in a food processor

Serve in bowls

Sprinkle the pumpkin, chia seeds and some drops of olive oil

Notes

The taste is beautifully scented with the lemon touch and the orange colour of the pumpkin looks so festive. As a highlight of this raw soup, the pumpkin is super rich in Vitamin E, B6 and fiber.
